Sapin-sapin is a traditional Filipino layered dessert made from glutinous rice flour, coconut milk and condensed milk. The dessert has three colorful layers with different flavors: purple ube, yellow langka and a natural white layer. It is steamed and finished with coconut oil and garnish.

Preparation steps

Mix glutinous rice flour, coconut milk, condensed milk and sugar.

Stir until the mixture is smooth and well dissolved. Divide evenly into 3 bowls.

Add a flavoring to each bowl (ube, langka and plain).

Brush the molds with oil.

Pour the ube mixture into the molds and steam for 10 minutes.

Then add the langka mixture and steam for about 10 minutes.

Carefully pour the plain batter over the yellow layer and steam for 10 minutes.

Brush the top and sides of the sapin-sapin with coconut oil.

Sprinkle with cheese, latik or coconut.
