Airy cake made with Greek yoghurt and separated eggs

- Greek yoghurt1 Β½ cup
- baking powder1 tsp
- sweetener or honeyΒ½ cup or ΒΌ cup
- vanilla extract or cinnamon or lemon zest or juice (optional)to taste
- strawberries or melted chocolate (topping, optional)to taste
Preparation

Separate the egg whites from the egg yolks. Beat the egg whites until they form stiff peaks.

In a separate bowl, mix the egg yolks, Greek yoghurt and baking powder.

Optionally add a sweetener and/or flavor variant to the egg yolk mixture.

Gently fold the egg yolk mixture through the egg whites.

Pour the batter into a greased or lined 8 inch baking pan.

Bake at 175Β°C for 30 minutes.

Turn off the oven. Open the oven door and let the cake cool in the oven for 15-20 minutes.

Place in the refrigerator for a few hours before slicing and adding toppings.
